FODMAP your favorites: Pizza

FODMAP Your Favorites is about feeling great while enjoying the foods you love most. Our low FODMAP pizza recipe is a fan favorite.

Ingredients
 
2 cups boiled potatoes, passed through a ricer or pureed
1 cup white rice flour
1/2 cup tapioca starch
1/3 cup warm water
1 teaspoon sugar
1 1/4 oz package active dry yeast
1/2 teaspoon salt
1 egg white
1 tablespoon olive oil
 
Directions
 
1. Pre-heat oven to 375 degrees F.
2. In a small bowl combine warm water, sugar and yeast. Let sit for about 10 minutes to activate the yeast, until the mixture becomes frothy.
3. In a separate bowl, combine potatoes, white rice flour, tapioca starch and olive oil.
4. Next, add egg white and yeast mixture.
5.  Mix well to combine, until mixture forms into a ball. The dough should be wet and sticky.
6. Place the ball of dough in a bowl and cover with plastic wrap. Let sit in a warm area for about 1 hour.
7. Roll out dough to about 1/4 inch thick and into desired shape.
8. Blind bake the dough (baking the dough without any sauce or cheese) for about 30 minutes.
9. Remove dough from the oven and top with about 1/2 cup low FODMAP pizza sauce (stay tuned for this recipe).
10. Add 40 grams or 1/4 cup of shredded mozzarella cheese and your favorite low FODMAP toppings of choice!
